1 lb. ground beef 1 lg. onion, cut into 8ths 1 clove garlic, chopped or minced 1/2 bell pepper, cut into strips 1 tsp. cumin 1/2 c. carrots, cut into cubes 1/2 c. peas, fresh or frozen 2 potatoes, cut into strips 1 c. winter squash 1 sm. handful angel-hair spaghetti 1 c. milk, room temperature Brown ground beef in large saucepan with small amount of oil; add onion, garlic, bell pepper and cumin. Add 3 cups water and rest of the vegetables. Cook for 25 minutes or until vegetables are tender. Add angel-hair spaghetti and turn off heat. Add milk before serving. Serve with or over cooked rice. Serves 4 to 6. |
