NON-TRADITIONAL CALZONE
 

These pockets are a meal in themselves. Serve with a Caesar salad and a good glass of wine.

1 tbsp. extra virgin olive oil
1/2 c. chopped onion
1/2 basic pizza dough (1 ball)
1 c. chopped sweet Italian turkey sausage, cooked
1 c. Ricotta cheese
1 c. cubed Mozzarella cheese
1/2 c. grated Romano cheese
2 SONOMA dried tomatoes, julliened
2 tsp. fresh sage
1/2 tsp. ground pepper
1 tbsp. extra virgin olive oil
1 lg. egg, lightly beaten

Pre-heat oven to 500 degrees. Lightly oil pan. Sprinkle with cornmeal.

Heat oil in pan, saute onions, and set aside.

On well-floured surface, press dough out to form a 12-inch circle, and set aside.

Combine the remaining ingredients and add onion, while mixing well.

With knife, cut line down the center of the dough, and arrange filling on one side of center. Fold other side over and pinch edges together well, making sure its completely sealed.

Poke a few holes in the top of the Calzone with fork, and bake until golden brown, 20-25 minutes. Makes 2 portions.
