ITALIAN SAUSAGE AND VEGETABLES
 

1 qt. spaghetti sauce homemade or Ragu traditional (maybe more)

Place 1 pound sweet Italian sausage in shallow pan to brown in 350 degree oven. Keep draining off fat. 3 lg. onions, cut in 1-inch pieces 3 bell peppers (any color), cut in chunks 1 lb. mushrooms, sliced

Melt a stick of butter in large pan. Cook until vegetables sweat. There will be quite a bit of juices in pan and the vegetables crunchy. Place them in large baking dish. Add sauce and cut the sausage in chunks and put in with vegetables.

When it's baked about 30 minutes at 350 degrees, cover with grated Mozzarella cheese and put back in the oven until melted. Can be browned under broiler. Serve with Italian bread.
