ITALIAN MEAT LOAF ROLL - UP
 

2 beaten eggs
3/4 c. seasoned bread crumbs
1/2 c. tomato juice
2 lbs. ground beef
Parsley
Oregano
Salt and pepper

Mix all together; spread on waxed paper and press into rectangular shape. Layer slices of ham and cheese of choice on top of meat loaf and roll up like jelly roll; press edges together. Bake at 350 degrees for 1 1/2 hours.
