COTTAGE CHEESE CAKE
 

3 eggs, separated
1 lb. cottage cheese or farmers cheese
1/2 c. sifted flour
1/2 tsp. baking soda
1/2 tsp. vanilla
1/2 c. sugar
1 c. liquified non-fat dried milk
2 tbsp. lemon juice
1/2 tsp. orange rind, grated
9 inch graham cracker pie crust in pan

Add milk, egg yolks, flour, salt, sugar, lemon, orange rind, vanilla in blender and blend well. Gradually add cheese. Beat egg whites and fold into mixture. Pour into graham cracker crust. Bake at 250 degrees for 1 hour and then turn off temperature and allow cake to sit in oven an additional hour before removing. When cool, store in refrigerator.
