GERMAN CHEESE CAKE
 

2/3 c. butter
2 eggs
1 1/2 c. flour
2/3 c. sugar
1 tsp. baking powder

Cream butter with sugar, then add remaining ingredients. Turn into greased spring-form pan and bake 20 minutes at 325 degrees. Cool. Remove sides and cut cake in half. Replace sided to bottom half of cake. Layer mandarin oranges on bottom half and then filling. Replace top half of cake. Chill 4 hours. Remove sides and sprinkle top with powdered sugar. Cake must be chilled thoroughly to cut easily.

FILLING:

2 c. smooth cottage cheese
3/4 c. sugar
2 tbsp. plain gelatin
1 c. whipped cream
1 lemon, juice and grate rind
1 tsp. vanilla
1/2 c. milk

Sprinkle gelatin over 6 tablespoons cool water. Let sit 10 minutes, then dissolve over low heat. Beat cottage cheese, milk, sugar, and vanilla well. Fold in gelatin and whipped cream. This is from a missionary I spent the summer with in Germany.
