ZEPPOLI DE RICOTTA
 

5 eggs
4 tbsp. sugar
1 tsp. vanilla or brandy

Put eggs, sugar and vanilla in bowl and beat well. 3 tsp. baking powder 1/2 tsp. salt

Sift together and gradually add to egg mixture. Beat well and add 1 pound ricotta and mix well. Let rest 1 hour. Drop by teaspoon with second spoon into hot oil (deep fry) until golden brown. Remove from oil with slotted spoon and drain on paper. Prick with pointed cake tester to allow steam to escape. Sprinkle with powdered sugar. Makes 3 dozen.
