FISH-POTATO CASSEROLE
 

2 c. leftover mashed potatoes
1/4 c. milk
2 eggs
1 tbsp. lemon pepper
2 tbsp. minced onion
1 qt. canned carp (or 1 can salmon)
1 c. grated American or Cheddar cheese

Set potatoes out of refrigerator to attain room temperature or warm slightly in microwave. Beat eggs and milk together until blended. Stir eggs, lemon pepper and onions into mashed potatoes.

Drain carp or salmon, remove bones and flake. Stir fish and 1/2 cup cheese into the potato mixture. Place in greased casserole and bake in 350 degree preheated oven for 30 minutes. Remove casserole. Top with remaining cheese and bake additional 15 minutes.
