STEAMED FISH
 

Use 1 pound fish fillets or steaks or a 3 pound dressed fish. Bring 2 cups water to boil in 10" skillet or fish poacher with tight fitting lid. Sprinkle fish with seasoning salt, 1 teaspoon. Place on greased rack so fish does not touch water. Cover pan tightly, steam until fish flakes easily when tested with fork, 3 or 4 minutes, steaks 5 minutes, dressed fish 20 minutes. Can be done in microwave with glass dishes.
