FISH TURBOT
 

1 1/2 c. milk
1/4 c. butter
1/4 c. flour
1/2 tsp. salt
1/4 tsp. black pepper
2 egg yolks
1/2 tsp. lemon juice (optional)
2 1/2 c. cooked fish, flaked

In a small saucepan, melt butter and stir in flour. Pour milk in slowly, stirring with a whisk. Cook until thick and season with salt and pepper. Remove from heat and whisk in egg yolks and lemon juice. In a glass round casserole dish, layer sauce and the fish, ending with sauce. You may put crumbled potato chips on top or whatever you choose. You may also add peas or any cooked vegetables that you like to this. Sliced hard boiled egg is good also. Bake at 350 degrees until it bubbles or about 40 minutes.
