4 c. white sauce 1 lb. raw shrimp 1 can crab meat 2 sm. lobster tails 2 lb. sole fillets 1/4 c. maderia wine 3 green onions, chopped 1/8 tsp. garlic powder 1/8 tsp. rosemary 1/8 tsp. thyme Dash white pepper 1 c. melted butter Make Basic white sauce, add spices and green onion. Shrimp and lobster should be cooked lightly before adding to sauce. Add crab, mix sauce thoroughly, cut sole in 6 ounce portions. Dip in melted butter, place fish in No. 5 brown paper bag. Pour 1 cup sauce over fish, fold bag down. Coat outside of bag with melted butter, bake at 375 degrees for 25 minutes. |
