3 servings. 1 serving: 1 foil package of fish 4 ounces. 1 1/2 tsp. vegetable oil (to oil foil) 1 1/2 tsp. lemon juice 1 tbsp. finely chopped onion 1 tbsp. finely chopped celery and leaves 1/8 tsp. salt Dash of pepper 1 tbsp. vegetable oil
Preheat oven to 400 degrees. Cut fresh or thawed fillets into 3 individual serving pieces. Tear or cut 3 separate pieces of heavy-duty foil about 12 or 14 inches square. Brush with 1 1/2 teaspoons vegetable oil to coat centers of each piece of foil. Place fish on top of oiled areas, then sprinkle fish with lemon juice. On top of fish, spread a layer of each: Onion, celery, salt, and pepper. Sprinkle 1 tablespoon vegetable oil over all. Lift up from opposite sides of fish to come together across top: Fold over twice, then pinch together to seal tightly. Seal ends in same way. Place foil packages in a shallow pan. Bake 25 minutes. To serve, lift each package onto a dinner plate, unwrap, and transfer cooked fish and sauce with a wide pancake turner.
