2" thick fish steak, cod is good Sunflower or vegetable oil 1 clove garlic, sliced lengthwise Fresh ginger to taste, sliced lengthwise Scallions, chopped 2 tbsp. vinegar 3 tbsp. soy sauce Flour Heat oil in skillet. Oil should be about 1" deep. Dredge fish in flour, then carefully place in hot oil. After 3 to 4 minutes, turn over fish. After 3 to 4 minutes on the other side, remove fish and discard oil. Replace fish in pan and add remaining ingredients. Also add about 1/3 cup water. Cover skillet and heat at medium high heat for about 10 minutes. Serve with rice. |
