PAN FISH IN EGGS AND CRACKER CRUMBS
 

Eggs (2 or 3)
Pan fish
Crackers
Corn Flake crumbs (Kellogg's)
Vegetable oil
Salt
Pepper
Garlic powder

Scale pan fish, debone and fillet. Place fillets skin side down on several layers of paper towels. Using more paper towels, pat the meat side dry.

Grind crackers into fine crumbs and add Corn Flake crumbs 1/4 to cracker crumbs. Into a sauce dish, whip two eggs with a fork.

Liberally salt, pepper and shake garlic powder onto the fillets. Dip fillets into eggs and drop them into a Tupperware bowl containing cracker crumbs. Shake them around until covered with crumbs.

You may use the pan fry method or deep fry. For pan fry, heat oil (about 1/2 inch) on a #4 setting on electric stove. Put pieces into pan meat side down and turn them over when first side turns golden brown. Repeat with side #2.

Deep fry. Set heat at 350 degrees. Put fish in basket and remove when they turn golden brown.
