1 (16 oz.) can salmon, drained and flaked 1/2 c. dry bread crumbs 1/2 c. mayonnaise 1/2 c. chopped onion 1/4 c. chopped green pepper 1 egg, beaten 1 tsp. salt Combine ingredients. Mix lightly. Shape into loaf in shallow baking dish. Bake at 350 degrees for 40 minutes. Serve with cucumber sauce. CUCUMBER SAUCE: 1/2 c. mayonnaise 1/2 c. sour cream 1/2 c. finely chopped cucumber 2 tbsp. chopped onion 1/2 tsp. dill weed Combine all ingredients. Mix well. Serve with salmon loaf.
