1 lb. fish or frozen fillets, thawed 1/2 c. yellow corn meal 1/2 tsp. dill weed or chili powder (optional) 1/2 tsp. salt 1/2 tsp. pepper 1 egg 2 tbsp. water 1-2 tbsp. butter 1-2 tbsp. oil Coat fish in combined dry ingredients; dip in combined egg and water. Coat again in dry ingredients. Pan fry in butter and oil until fish flakes easily with fork. Drain on paper towel. Serves 3-4. |
