LEMON BAKED FISH
 

1 lb. either scrod, cod, haddock or flounder
1/3 c. Italian bread crumbs
Juice of 1/2 lemon
2 tbsp. melted butter

Preheat oven at 425 degrees. Spray Pam into 2-3 individual baking dish depending on size of portion you intend to serve (ounces). Place freshly washed and dried fish into dish. Squeeze fresh lemon juice over each fillet. Mix bread crumbs with butter and spread over the tops of the fillets.

Bake at 425 degrees for approximately 10-15 minutes until fish turns white indicating it's done. if the top of the fish has not browned, pop under the broiler for a minute or two. Serve with lemon wedges and catsup.
