1 1/2 lbs. white fish
1 tsp. grated lemon rind
1/4 tsp. dried basil
3 tsp. butter
4 tsp. lemon juice
Salt and pepper to taste
Heat oven to 450 degrees.
Place fish in oven-proof dish. Blend together all ingredients and pour over fish. Cover with foil and bake for 20-25 minutes or until fish flakes easily when tested with a fork.
