PAN "FRIED" FISH
 

Choose firm, thick fish fillets and a nonstick skillet when "frying" fish this lowfat way. 2 tsp. cornstarch 1/4 c. cornmeal 2 tsp. dry mustard 1/2 tsp. minced onion 1/2 tsp. garlic powder 1/2 tsp. salt free seasoning blend Freshly ground pepper to taste 1 1/4 lb. fish fillets 2 tsp. safflower or corn oil

In 1 bowl, combine egg white and cornstarch; mix well. In another bowl, blend cornmeal and seasonings. Dip fish in egg white mixture and then in cornmeal. Brush a nonstick skillet with 1 teaspoon oil, heat and brown fish. Reduce heat, cover and cook fish for 5-7 minutes (time will depend on thickness of fish). Remove fish from pan and brush pan with oil. Brown other side of fish, reduce heat, cover and cook 5-7 minutes.
