PAN - FRIED CORNMEAL FISH
 

2 lb. fish fillets, cut into serving pieces
2/3 c. Bisquick mix
2 tbsp. cornmeal
1 tsp. salt
1/4 tsp. pepper
1 tbsp. water
1 egg
Vegetable or olive oil

Pat fish dry. Mix baking mix, cornmeal, salt and pepper in one dish. Beat water and egg in another. Dip fish first into egg, then coat with cornmeal mixture. Heat oil (1/8 inch) in skillet until hot. Fry fish over medium heat, turning carefully until brown on both sides, about 10 minutes each side. 6-8 servings.
