BAKED HALIBUT
 

Halibut or white fish like cod with no bones for 4-6, cut into serving size pieces
1/2 cup water
1/2 cup white wine
1/2 cup melted butter
1 cup Bread crumbs
1 c. sour cream
1/2 c. mayonnaise
1 onion, chopped
1 tbsp. parsley flakes
1/2 tsp. tarragon
pinch of salt
pinch of pepper
lemon wedges (optional)

Soak fish in mixture of 1/2 water and 1/2 white wine for 15-30 minutes. Use amount specified, or more if needed to cover the quantity of fish you have.

Drain on paper towel. Roll the fish in melted butter and then in bread crumbs and put in a baking pan. (A pinch of parsley flakes, garlic powder and onion powder may optionally be added to the bread crumbs).

Broil until fish flakes easily when separated with a fork; fish will be white and opaque; about 10-15 minutes or more, depending upon the size of the fish.

To make sauce, combine sour cream and mayonnaise, finely minced onion, 1/2 tsp. fresh minced tarragon (or 1/4 cup sweet relish may also be added). Serve on the side in a separate bowl.

Serve fish with lemon wedges.
