FRIED TROUT
 

Clean and trim fish all around but do not cut of their heads. Cover well with flour and fry in a pan of boiling oil. Turn from side to side until browned. Drain excess oil. Garnish with parsley or plain melted butter. if preferred, trout can be larded with beaten egg and dipped in bread crumbs. Frying time is 5 to 8 minutes depending on size.
