STUFFINGS FOR FISH, MEAT, POULTRY AND
GAME
 

2 c. hot mashed potatoes
1 c. bread crumbs
1/2 tsp. pepper
1/2 tsp. salt
1 tsp. sage
4 tbsp. melted butter or other fat
2 tbsp. onion juice

Mix the ingredients in order given. Makes 3 cups.

SAUSAGE STUFFING:

1/2 lb. sausage meat
2 c. dried bread crumbs
Salt & pepper
1 tbsp. onion juice
1 tbsp. minced parsley

Mix sausage and crumbs, then add seasonings. Makes 3 cups.

MUSHROOM STUFFING:

3 c. dry bread crumbs
6 tbsp. melted butter
1/2 c. chopped mushrooms
1/2 tsp. powdered thyme
1 tsp. minced parsley
1/2 tsp. salt
