FANCY EGG SCRAMBLE
 

1 c. Canadian bacon or ham
1/4 c. chopped onion
3 tbsp. butter
1/4 c. chopped onion
12 beaten eggs
1 (13 oz.) canned mushrooms, drained
1 recipe cheese sauce
4 tsp. melted butter
2 1/4 c. soft bread crumbs

CHEESE SAUCE:

2 tbsp. butter, melted

Blend in: 1/2 tsp. salt & pepper

Add 2 cups milk. Stir until thick. Blend in 1 cup (4 ounces) shredded Velveeta cheese.

Cook bacon and onion until tender. Add eggs and scramble until just set. Fold mushrooms and eggs into cheese sauce. Turn into greased oblong 9 x 13 inch pan. Combine melted butter and crumbs. Sprinkle over eggs. Cover and chill until ready to bake. Bake at 350 degrees for 30 minutes. Can make the night before, but don't bake until next day.
