1. Prepare Hollandaise Sauce; keep warm.
2. Poach eggs until of desired doneness. Keep eggs warm. Preheat broiler if manufacturer directs.
3. Split muffins; spread each half lightly with butter. Place, buttered side up, on broiling pan, with bacon or cooked ham alongside. Broil until muffin halves are toasted and bacon or ham is heated through.
4. On heated platter, place bacon or ham slice on each muffin half; top each with a poached egg. Generously spoon Hollandaise Sauce over eggs.
