FIVE EGG WHITE BUTTERMILK CAKE
 

2 c. sugar
1 c. Crisco
1 c. buttermilk
1 tsp. vanilla flavoring
1/2 tsp. lemon flavoring
1/4 tsp. almond flavoring
3 c. all-purpose flour
1 tsp. salt
1/2 tsp. baking soda
5 egg whites, separated

Cream together sugar and Crisco. Sift flour, salt and baking soda together. Add flavorings to buttermilk. Add flour mixture and buttermilk alternately to creamed shortening and sugar. Add egg whites one at a time and beat at medium speed for 2 minutes after each addition. Grease and flour 9 x 13 inch sheet cake pan, or 2 (9 inch) round pans.

Bake at 325 degrees for 45 minutes. Cool in pan for 10 minutes. Turn out on wire rack to cool completely.

NOTE: If you beat this cake the amount that it calls for, it has a texture similar to an angel food cake. This cake is good with strawberries and whipped cream.
