1 EGG BLUEBERRY CAKE
 

1 1/3 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/4 c. butter
3/4 c. sugar
1/2 tsp. vanilla
1/2 c. milk
1 egg, well beaten
1 c. blueberries
1/4 c. sugar
1/2 tsp. cinnamon

Sift together flour, baking powder, salt. Set aside. In small bowl, cream butter till light and fluffy. Gradually beat in 3/4 cup sugar, vanilla, and egg. Alternate dry ingredients with milk. Fold in blueberries. Sprinkle sugar/cinnamon mixture over top. Bake in 8 x 8 inch pan at 350 degrees for 35 to 40 minutes.
