1 c. flour
1/2 tsp. salt
1 1/2 tsp. baking powder
1 c. apple sauce
1/4 tsp. grated lemon or orange peel
1/4 to 1/2 tsp. cinnamon
1 tbsp. sugar
1/4 tsp. vanilla
2 eggs, separated
1 1/2 tsp. melted butter

Sift flour, salt, and baking powder into mixing bowl. Blend in next 5 ingredients. Beat egg yolks and add in butter. Beat egg whites until stiff and fold into other ingredients. Pour about 1/4 cup batter for each pancake onto hot greased griddle. Turn cake once. Makes about 10.
