EGGPLANT WITH MEAT SAUCE SHEIKHIL

1 lb. eggplant
1/2 lb. lamb meat
1 med. onion, chopped
2 tbsp. pine nuts
1 tsp. salt
1 tsp. allspice
1 can tomato sauce
1 can water
Grated cheese

Cut eggplant lengthwise in quarters and then cut quarters in half. Sections should resemble a small sailboat. Slit each piece in center. Brush with oil and put in 350 degree oven for 20 minutes until it starts to brown. Arrange pieces in baking dish. Fill the center of each eggplant piece with meat stuffing prepared by frying together meat, onions, pine nuts, and stuffing. Put 1 teaspoon of tomato sauce over stuffing. On each piece of eggplant sprinkle with grated cheese. Mix together sauce with water and pour into pan to cover the bottom. Bake at 375 degrees for 20 minutes.
