2 tbsp. sliced almonds
4 c. torn fresh spinach leaves
1/2 c. sliced fresh strawberries
3/4 c. plus 2 tbsp. unsweetened orange juice
2 3/4 tsp. cornstarch
1 tsp. vegetable oil
2 tsp. honey
Dash of ground cardamom
1/2 tsp. poppy seeds
For salad - sprinkle almonds in a glass pie plate. Microwave at High 2 to 3 minutes or until roasted, stirring after each minute.
For dressing - combine first five ingredients in small glass bowl; stir well. Microwave at High 1 1/2 to 2 minutes or until slightly thickened, stirring after each minute. Let mixture cool; stir in poppy seeds.
Arrange salad ingredients on individual plates and add 2 tablespoons of dressing and serve immediately.
