SPINACH SALAD (WITH SWEET & SOUR
DRESSING)
 

Dressing: 3/4 c. confectioners sugar 1/4 c. apple cider vinegar 1 tbsp. fresh lemon juice 1 1/2 tsp. dry mustard 1 1/2 tsp. paprika 1/2 tsp. salt 1/2 tsp. ground ginger

Combine dressing ingredients and set aside.

SALAD:

2 bunches fresh spinach or romaine lettuce
1/2 lb. bacon, crisply fried and crumbled
1/2 c. golden raisins
1 1/2 c. Jerusalem artichokes, peeled and sliced (also called sunchokes or sun roots, Jerusalem artichokes are a tuber or root vegetable
1/3 c. thinly sliced green onions (including green portion)
2 tbsp. toasted sesame seeds
3 red apples, cored and cut into bite - sized chunks
1/2 c. dry - roasted peanuts

Wash and dry spinach or romaine lettuce; tear into bite size pieces. Choose several of the remaining ingredients. At serving time, place spinach or romaine lettuce leaves in a bowl. Add and toss several of the suggested salad ingredients. Toss with dressing and serve.
