SPINACH SALAD & DRESSING
 

1 lb. fresh spinach
3 hard cooked eggs
6 strips bacon
1 lg. red onion
Mushrooms (opt.)

DRESSING:

1 egg yolk
1 tbsp. sugar
1 1/2 tsp. paprika
1 tbsp. Worcestershire sauce
1/2 tsp. salt
1/4 tsp. dry mustard
1/4 tsp. pepper
3/4 c. salad oil
1/4 c. wine vinegar

Wash and dry spinach; chop eggs finely. Cook bacon until very crisp; crumble. Slice onion thinly.

For dressing, mix egg yolk with seasonings and mix until smooth. Slowly add oil (about 1 tablespoon at a time). Slowly add vinegar. Toss with salad.
