SPINACH SALAD AND DRESSING
 

DRESSING:

1 c. vegetable oil
5 tbsp. red wine vinegar
1/4 c. sour cream
1 1/2 tsp. salt
1/2 tsp. dry mustard
2 tbsp. sugar
2 tsp. parsley
2 cloves garlic, crushed

SALAD:

1 bag fresh spinach, washed & stemmed
4 hard cooked eggs, sliced
8 strips crisp bacon

Mix dressing ingredients six hours before serving. Chill. Combine spinach, eggs and bacon. Just before serving, pour dressing over salad and toss. Serves six.
