1/2 c. raisins (add fruit cocktail instead of raisins to make more like fruitcake) Fruit cocktail, drained 1/2 c. water 1 c. unsweetened applesauce 2 eggs 2 tbsp. liquid sweetener 1/2 c. cooking oil 2 c. flour 1 tsp. baking soda 1/2 tsp. nutmeg 1 1/2 tsp. cinnamon 1 tsp. vanilla Cook raisins in water until all water is gone; cool. Add applesauce, eggs, and sweetener. Mix well. Add oil, mix well. Sift together dry ingredients and stir mixture. Last add vanilla. Bake in 4 x 4 x 8 inch loaf pan, at 350 degrees until golden brown, about 45 minutes. |
