PASTA WITH BOLOGNESE SAUCE
 

2 tbsp. oil
2 tbsp. butter
1/4 c. chopped onion
1/2 c. chopped celery (optional)
1/2 c. grated carrots
1/4 c. sliced mushrooms or canned (optional)
1 c ground beef
1/2 c. chopped cooked ham
4 tbsp. tomato paste or 3/4 cup tomato puree
2 c. beef stock or 2 cups water with 2 teaspoon beef bouillon
1/4 c. white cooking wine
1/4 c. heavy cream
1 pkg. pasta (peene or ziti preferred) or spaghetti

In large pan heat butter and oil over medium heat. Cook onion, celery, carrots and mushrooms until tender. Add beef and ham. Stir to combine, cooking 1 minute more. Add tomato paste, beef stock and wine. Stir. Partially cover and simmer approximately 1 hour, until thickened. Remove from heat, stir in cream. Cook pasta according to package. Serve sauce over pasta. Sprinkle with mozzarella or Romano cheese.
