Torn fresh spinach 4 to 5 strips bacon, cooked and crumbled Hard boiled eggs, diced Chopped spring onions and tops DRESSING: 1 c. salad oil 5 tbsp. red wine vinegar 4 tbsp. sour cream 1/2 tsp. dry mustard 2 tbsp. sugar 2 tsp. fresh parsley (chopped) 2 cloves garlic, crushed Mix spinach, bacon, eggs and onions in salad bowl. Combine all dressing ingredients in quart jar and shake thoroughly. Better if made before hand and let blend. Serve on individual servings or pour over spinach mix and toss. Leftover dressing can be refrigerated for later use. |
