PUDDINGS AND PORRIDGE
 

If necessary, this pudding may be cooked entirely on top of the stove, just simmer on low heat instead of baking for the last 20 minutes. Simmered or baked, a variety of puddings can be prepared with rice or other whole grains or cereals. Use fresh or dried fruit, toasted seeds, or chopped nuts in place of, or in addition to, the ingredients given here, or use part apple juice for a different sweetness. A creamy breakfast porridge can be prepared by simmering rice in 4 to 5 parts water for 1 hour or more.
