1/2 c. butter, softened 1 c. plus 2 tbsp. flour 1 1/3 c. sugar plus 1 tbsp. 3 eggs, separated 1/4 tsp. salt (optional) 1/2 c. half and half 2 1/2 c. cut up rhubarb 1/4 tsp. almond extract 1 tsp. vanilla 1/4 c. flaked coconut Combine the 1/2 cup butter, flour, and 1 tablespoon sugar in bowl. Mix well. Press into ungreased 9 inch square Pyrex baking dish. Bake 20 minutes at 350 degrees. Meantime combine egg yolks, 1 cup sugar and remaining 2 tablespoons flour, salt, and half and half. Stir in rhubarb. Pour over baked layers. Bake at 350 degrees for 45 minutes. Beat egg whites until foamy. Add 1/3 cup sugar and beat until stiff; add vanilla. Spread over mixture. Sprinkle with coconut. Bake until lightly browned, 10-15 minutes. Makes 9 servings. |
