STRAWBERRY SHERBET
 

1 tbsp. (1 env.) unflavored gelatin
1/4 c. cold water
1 c. hot water
1/2 c. sugar
2 pkg. (10 oz. each) frozen strawberries, thawed or 2 c. sliced fresh strawberries, sweetened to taste & allowed to stand 2 hours
3 tbsp. lemon juice

Sprinkle gelatin over cold water in saucepan and allow to stand 5 minutes. Add hot water and sugar. Heat, stirring constantly until gelatin is dissolved. Remove from heat and add undrained strawberries and lemon juice.

Place in shallow pan in freezer until mixture is firm at the edges. Beat with electric mixer until well mixed. Return to freezer until firm. Variation: Raspberry Sherbet - Use fresh or frozen raspberries in place of strawberries. Makes 6 servings. 155 calories per serving.
