RICOTTA CHEESE COOKIES
 

2 well beaten eggs
2 c. sugar
1/2 lb. butter
2 tsp. vanilla
1 lb. Ricotta cheese
4 c. flour
1 tsp. baking soda

FROSTING:

3 c. powdered sugar
3 tbsp. milk
1 1/2 tsp. vanilla
1/3 c. Crisco

Cream eggs, sugar and butter together. Add remaining ingredients and mix by hand. Do not use electric mixer. Drop by teaspoons onto lightly greased cookie sheet. Bake 350 degrees 10 minutes. Cool and ice. Food coloring can be added to frosting.
