RAINBOW JELLO

6 oz. red Jello
2 c. boiling water
6 oz. green Jello
2 c. boiling water
1 1/2 env. Knox gelatin
1/2 c. cold water
1/2 c. sugar
8 oz. container sour cream
1 tsp. vanilla
1/2 pt. heavy cream

Use a 9 x 13 inch pan.

FIRST LAYER:

Dissolve red jello in 2 cups boiling water. Lightly oil or spray Pam in 9 x 13 inch pan. Make sure pan is flat and even (level for the refrigerator rack). Pour jello in pan and wait 2 hours to set firmly.

SECOND LAYER:

1/2 cup cold water in small bowl. Sprinkle 1 1/2 envelopes Knox into water. Stir and let set. Take heavy cream and bring just to a boil on stove. Remove from heat. Add unflavored Knox, 1/2 cup sugar, sour cream, and vanilla. Blend well. Set for 10 minutes. Pour on top of red jello mixture. Wait 2 hours.

THIRD LAYER:

Dissolve green jello in 2 cups boiling water. Let cool. Pour on top of white mixture. Let set. Also good as a light dessert. Nice for Christmas. For Easter substitute black raspberry and lemon jello.
