1/3 c. shortening 1 3/4 c. sifted cake flour 3/4 c. sugar 2 1/2 tsp. baking powder 1/2 tsp. salt 1 egg 3/4 c. milk 1/2 tsp. vanilla Place shortening in mixing bowl; sift in dry ingredients. Add egg and 1/2 cup milk; mix until flour is moistened. Beat 2 minutes at medium speed on electric mixer. Add 1/4 cup milk and vanilla; beat 2 minutes longer. Fill paper bake cups in muffin pans half full. Bake at 375 degrees for 20 to 25 minutes. Cool. Frost with favorite frosting. For favorite cupcakes add 1/2 teaspoon of favorite flavor. Makes 18 cupcakes. |
