ALMIGHTY ALMOND COCONUT COOKIES
 

1 1/2 c. sugar
1 c. butter
2 eggs (separate whites & save)
3/4 c. almonds, chopped
2 tsp. cream of tartar
2 1/2 c. flour
1 level tsp. baking soda
1/2 tsp. almond extract
1 to 3 c. coconut (to taste)

Mix ingredients together in large bowl on medium speed for approximately 2 minutes. Roll into balls and dip into egg whites, then coconut before placing them on an ungreased cookie sheet. Bake at 350 degrees for 10 minutes for until coconut is light brown.
