APPLE STREUSEL BARS
 

2 c. flour
1/2 c. sugar
1/2 tsp. baking powder
1/2 tsp. salt
1 c. butter
2 eggs

FILLING:

4 c. peeled and sliced apples
3/4 c. sugar
1/4 c. flour
1 tsp. cinnamon

Combine sugar, baking powder and salt. Cut in butter until crumbs are the small size of peas. Separate eggs, reserve whites for later use. Beat yolks slightly and stir into mixture. Press 3/4 of this into a 15 x 10 inch pan. Put on filling combining all ingredients and arrange over bottom crust. Crumble remaining crumb mixture over apples. Beat egg whites slightly and carefully brush over all. Bake at 350 degrees for 35 to 40 minutes.

ICING:

1/2 c. powdered sugar
1/8 tsp. salt
1 tbsp butter
1 tbsp. cream
1 tsp. lemon juice

Beat first four ingredients then add lemon juice. If too thick add more cream. Drizzle over bars.
