2/3 c. whole wheat flour
2/3 c. safflower oil
1 egg or 1/4 c. egg substitute
1/3 c. brown sugar, packed
1 tsp. vanilla
1/2 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. or less salt
1 1/2 c. uncooked rolled oats
1 c. unsalted low fat cheddar cheese, grated
3/4 c. raisins
1 c. apples, peeled and chopped
Mix flour, oil, egg, sugar, vanilla, cinnamon, baking powder and salt with wooden spoon; stir in oats, cheese and raisins add apples; stir. Drop by heaping tablespoons onto Teflon baking sheets. Bake at 375 degrees for 20 minutes or until golden brown. Store in airtight jar in refrigerator.
NOTE: Perfect with fresh orange or apple juice at breakfast.
