ALL TIME FAVORITE LEMON BARS
 

1 c. all-purpose flour (self-rising is not recommended)
1/4 c. powdered sugar
1/2 c. butter
2 eggs
1 c. sugar
2 tbsp. flour
1 tbsp. grated lemon peel
1/2 tsp. baking powder
2 tbsp. lemon juice

Heat oven to 350 degrees. In a large bowl, combine flour and powdered sugar; cut in butter until crumbly. Press flour mixture into ungreased 8 or 9 inch square pan. Bake at 350 degrees for 15 minutes. In small bowl, beat eggs and sugar until light colored; stir in remaining ingredients. Pour egg mixture over partially baked crust. Return to oven and bake 18 to 25 minutes or until light golden brown. Cool completely. If desired, sprinkle with powdered sugar. Cut into bars. Makes 24 bars.
