Beat 2 eggs with a fork until well blended. Stir in 2/3 cup salad or cooking oil, 2 teaspoons vanilla and 1 teaspoon grated lemon peel (or flavoring or juice). Blend in 3/4 cup sugar until mixture thickens. Stir together and add: 2 c. sifted flour 1/2 tsp. salt 2 tsp. baking powder Drop by teaspoonfuls about 2 inches apart on ungreased cookie sheet. Sprinkle with sugar. Bake 8 to 10 minutes at 375-400 degrees or until light brown. |
