PUMPKIN GOBS
 

2 c. brown sugar
1 c. oil
2 c. pumpkin
2 eggs
3/4 tsp. ginger
3/4 tsp. cloves
1 tsp. salt, baking powder, cinnamon, baking soda and vanilla
3 c. flour

Cream sugar, oil, eggs and pumpkin. Add vanilla and dry ingredients. Mix thoroughly and drop by teaspoon on lightly greased cookie sheet. Bake at 350 degrees for 12 to 15 minutes. When cool, fill with gob filling.

GOB FILLING:

1 box instant vanilla pudding (3 oz. size)
1 c. sugar
1 c. milk
1 c. shortening
1 tsp. vanilla

Put all ingredients in mixing bowl and beat until it is thick enough to spread. Put filling on one cookie and top with another. These freeze well.
