CARAMEL - FILLED CHOCOLATE COOKIES
 

2 1/2 c. flour
3/4 c. cocoa
1 tsp. baking soda
1 c. sugar
1 c. firmly packed brown sugar
1 c. butter (softened)
2 tsp. vanilla
2 eggs
48 Rolo chewy caramels in milk chocolate
1 c. pecans, chopped (divided) add 1/2 to dough

Combine 1/2 cup nuts and 1 tablespoon sugar. Sift together flour, cocoa and baking soda. Combine sugars, butter, vanilla and eggs. Add dry ingredients and nuts. Let stand 15 minutes.

For each cookie, shape about 1 tablespoon dough around 1 caramel candy, covering completely. Dip 1 side in sugar and nut mixture. Place on ungreased cookie sheet with nut side up. Bake at 375 degrees for 7-10 minutes.

Can drizzle over cookies: 4 ounces vanilla flavored candy coating after baked. (Melt candy coating in small saucepan over low heat, stirring constantly.)
