BANANA - CHOCOLATE CHIP CUPCAKES
 

1/2 c. butter (or butter)
1 c. sugar
1 egg
1 c. mashed bananas
12 oz. chocolate chips
1 tsp. soda
1 tbsp. water
1 1/2 c. unbleached flour
1 tsp. nutmeg
1 tsp. vanilla

Cream butter and sugar. Add egg and mashed bananas. Dissolve 1 teaspoon soda in 1 tablespoon water, then add to creamed mixture. Beat in (low speed) flour, nutmeg and vanilla. Then stir in chocolate chips. Use paper liners in your muffin tin. This keeps your cupcakes moist. Bake at 375 degrees for 12-15 minutes. Cool and frost as desired. Great for snacks or kids birthdays!
